The story of Madame Mai
Madame Mai was born in 2021 when COVID-19 just ended and everyone started getting back to the hustle life. Like many, our founder - Kien Nguyen - was consumed with work, so he often seeked convenient meals, which were often fast food or instant food. While he knew those foods lack much of the needed nutrition, he couldn’t find other solutions that are more healthy and convenient.
One day, after a particularly busy stretch, Kien came home to a steaming bowl of Bun Bo Hue prepared by his mother. It brought warmth, nourishment, and a deep sense of comfort that fast food never could. He then saw a gap in the market: there was almost no brand that had developed Bun Bo Hue- a Vietnamese meal, which is no frozen meal could replicate the feeling of eating a homemade dish, and no product offered a balance of convenience, nutrition, and authentic flavour. That’s when he set out to create Madame Mai—a frozen food brand that brings the essence of home-cooked meals to busy people everywhere.
When Kien first told people about the frozen food idea, many told him that he was ‘reaching too high’. They said Australians’ culinary culture is different and his ‘convenient’ food could never beat the convenient food from big fast food chains or the familiar taste of meat pie and sausage roll. However, Kien’s goal was never to beat those foods, he was focusing on creating a more desirable meal, that is more healthy and flavourful, that would save people time from cooking and money from eating out, and that are so easy to store.
To bring his idea into life, Kien developed the recipes with the best chef he knows - his mom - to create that nostalgic and homemade taste he has been enjoying all his life. Together, the flavourful recipes for Pho and Bun Bo Hue were created using fresh ingredients and authentic taste.
“ Simply put, Madame Mai is where traditional, authentic flavours meets modern cooking technology”
When Madame Mai was first launched, we received overwhelming support from customers, not just for how convenient and easy the meals are to prepare but also for the authentic and nostalgic taste our products bring. This really motivates us to keep up the good work and continue to research and expand our product line to other traditional dishes from Southeast Asia in the future, bringing more convenience options for people.
Madame Mai: The Meaning Behind the Name
Madame Mai was named in honour of our founder's mother, whose cooking inspired not only the recipes but the very idea behind the brand. Her meals reminded Kien of the importance of nourishment, tradition, and the comforting taste of home after a long, tiring day. Now, with Madame Mai, we bring that same experience to your home, your working place, your everywhere one bowl at a time.

We pride ourselves on using traditional slow-cooking techniques that can take up to 20 hours for our broth to develop rich, authentic flavours. This dedication ensures that each dish is crafted with care and precision, just like you would in your own kitchen.
Fast-cooling technology
Fast-cooling technology allows us to ensure food safety without the need for excessive preservatives, making our products easy-to-preserve as it can stay in your freezer. Furthermore, this technology helps maintain the original texture of ingredients, making our bowl taste as fresh as a just cooked one.
Fulfilling meals
We designed our bowls to contain 750g each because we understand that good food is meant to be shared. That’s why we offer big portions at an affordable price, ensuring there’s enough to satisfy everyone at the table without breaking the bank.
